Denmark is wonder of a country, fantastic cities and spectacularly beautiful country side, and surprisingly warm and blue seas. To me it is one of THE culinary destinations. In some countries children aspire to be doctors or lawyers or in Greece ship owners, but in Denmark you almost get the feeling that they aspire to be chefs. The Danish and Copenhagen specifically has gone through a food revolution in recent years and it seems everywhere you turn there is someone in chef whites walking down the street. So many windows at street level with the smell of bread, pastry or food wafting out filled with busy chefs or bakers toiling, it really is a wonder. Its was no surprise to me that Noma was named the worlds best restaurant 2010, 2011 and 2012 and was 2nd or 3rd '09, '13 and '15. Noma put new nordic on the international food map... problem is trying to get a table a Noma is not and easy feat even with some connections and only a day or two in advance. Plus it aint cheap, Noma requires re-mortgaging so maybe a happy miss. Claus Meyer a chef who is one of the creators of New Nordic and the co-founder of Noma and man on a culinary mission has opened the incredibly reasonable but spectacular Radio. Located in Copenhagen across the street from the National Radio Broadcast Centre it is a cozy wood lined dining room that wsa the location of one of the best lunches I have ever had. This is where I find myself on a wet and suitably cool nordic autumn day for one of the best lunches I have ever had. I was in Copenhagen singing at the Old Royal Opera, Leos Jancek's opera Katya Kabanova for Danish National Opera. Den Jyske Opera which works out of Aarhus and tours productions all over Denmark. My college Richard Roberts and his wife joined Anita and I, Richard who was playing one of the 3 tenor roles in Katya and was a regular conspirator at many a bar across Denmark. Radio was deserted for some odd reason but all the better when a couple of opera singers go to lunch, it can get a bit loud. The menu is a set menu, I think it was 5 course and we chose to have it with wine pairings. Radio is a veg and fish heavy restaurant that grows almost everything they serve and the fish and cheese were all local. In short lunch was spectacular, deeply rooted in the New Nordic tradition of local and seasonal, its was an afternoon of exploration into the subtle flavors and textures and expression of Nordic food that takes you on a journey, tells a story. A meal that picks you up and elevates life in a way that only great art can! Wine pairings were excellent and we all had a great and memorable afternoon. Luncheon is my favourite thing to do and this lunch and the memory of is why I do what I do. If you are in Copenhagen on a wet and rainy afternoon I highly recommend you seek out this gem, skip noma and get straight on the Radio!
